Pepsin

Pepsin is a digestive protein found in the highly acidic environment of the stomach.  It acts on proteins to break them down to their constituent amino acids.  Pepsin is an ideal enzyme for studying the effect of pH because its functionality is reduced in non-acid environments.

Suggested Protocol Note:

There is a different protocol for each type of pepsin

 - supplier and enzyme activity level is different.

The suppliers are coded as the last letter on the product code of vial.
